Hi Yall,

The days have been flying by and I haven’t felt too tired from getting up at 6:30 [yet]. I spent more time organizing files today, got an email address (!) and learned about different opportunities within the school. In addition to my regular case load, it looks like I might be coordinating the Student Support Team, which is exciting, but very overwhelming at this point. I really need to get myself organized and mentally prepared for the busy life that will be mine this year.

Lunch today was leftover eggplant parm. Not very appetizing, I know, but pretty tasty in the middle of a work day.

In other news, Ralph’s name is officially being changed to Jon because two family members complained that they had bad associations with the name Ralph. Moving on. Babysitting with Jon was great today because I got to go here:

Soccer practice! Today was the start of the season for the 6 & 7-year-old 3 v 3 league so I got to sit on the bleachers with the other moms and cheer on the kids (aka read blogs on my phone and enjoy the sunshine).

After work, I stopped at Pier One and spent a $5 gift card (Thanks Kath!) on some pumpkin spice candles in celebration of fall.

The fall theme continued at dinner with sweet potato enchiladas!! I can’t remember what inspired me to make these, but I always love the black bean + sweet potato combo and decided to go for the enchilada instead of my go-to quesadillas. The recipe is loosely based on one I found on GlutenFreeGoodless. I didn’t have some of the ingredients she used or the patience for the homemade sauce, so I took some shortcuts and kept these simple….

i.e. the sweet potatoes were microwaved and mashed up with green chiles, chili powder, and salt + pepper. I also opted to mix in the black beans, rather than making a separate black bean mixture and layering the two.

Everything was spooned into warm mini corn tortillas….

and arranged in a pool of salsa verde (obviously from a jar) for baking.

Oh, and don’t forget lots of cheese!

I cleaned my plate and saved two for Friday’s lunch.

    Those enchiladas look awesome! I was looking for an enchilada recipe for next week – I’ll just use this one!

    And yes, I like the change to “Jon.” I’m wondering who else complained about Ralph? It’s not that I hate the name–I had a wonderful cat named Ralph–it just didn’t seem to suit a contemporary little boy.

      Twas me! I have negative associations with the word Ralph…kind of like how I try to stay away from calling my friend Chris, Chuck (up-chuck) or Martha, Barth (Barf)

    Those enchiladas look gorgeous – I haven’t even thought about sweet potatotes lately so I think this recipe has to go on the “to-do” list.

    p.s. Lunch eats never need to look photogenic – deliciousness is the #1 object.
