Apples to Apples

Good Evening,

Despite only 6 hours of sleep, I had productive day at the high school and left feeling content. I met with a few of the guidance counselors about my newly-assigned cases and made phone calls to parents. I’m just so pleased to be working at such an awesome place with welcoming, friendly faces:)

I’m also pleased that it’s apple season because I’ve been eating them in some form every day. Sometimes I think apples are boring because I get to enjoy them so often and their taste isn’t as exciting as something like a pineapple.  But, when I really think about it, I realize how much I love them; they are soo versatile and convenient….like today, when I didn’t feel like another ham sandwich…

…apple, white cheddar, and jam sandwich with a side of yogurt + oatmeal squares and, obviously, an apple.

It was a hot one in Boston, so I soaked up one of the final days of summer on the bleachers of Jon’s soccer practice; I just zoned out for a while until I received some exciting text messages about college friends potentially visiting for my birthday festivities and got sooo excited for October!!

I can’t tell you how happy I was to come straight home after babysitting and relax this evening. But before relaxation, I sliced six apples for one of my favorite childhood dishes: stewed apples. Something about these plus the fall reminds me of watching Full House and waiting for dinner to cook when I was little.

I cooked the apples down with water and added a lot of cinnamon and a little brown sugar at the end.

Served with Annie’s mac + cheese with peas.

All that was missing was an episode of Full House! I’ll have to settle for House Hunters on Hulu. Night!

    Apples and cheese are such a good combination.
    I have never tried stewed apples. Now I have to!

    I tried putting granny smith apples on a turkey sandwich a few times and it was delish!

    I’m going apple picking for the first time next weekend, I can’t wait! I have a feeling i’ll be eating apples the rest of the winter. I may just have to try your apple stew to use some up =)

      I’m dying to go apple picking this year, but I don’t know of any places that I could get to without a car:( Have fun!

    Stewed apples=YUM! And I always overlook apple-and-cheese sandwiches, but hopefully I’ll remember next time I have a few apples lying around.

    P.S. Loved Full House! Them were the days.

    Hahaha…Food choices for fall pretty much boil down to: squash, pumpkin, apples or “spices” for every meal. It’s a fantastic problem to have.
