A Difficult Goodbye

I can feel it coming — the first sore throat of the year:(  Hopefully it’s nothing because I’m going home on Friday!!

I’ve been meaning to make chicken salad for a while because I thought it’d be good for lunches and because Matt loves it. I found some free-range organic chicken at a great price this weekend. It was on the bone, so I figured it would the perfect opportunity to put a fall twist on chicken salad.  Surprise! More butternut squash…

I’m not a big mayo person, so I used 4-5 ounces of greek yogurt instead. I didn’t use any specific quantities, but added cubed, cooked butternut squash, raisins, salt + pepper, paprika, cinnamon, and tarragon to taste. The only other thing I would have loved in this is pecans or walnuts.

It was so fun having something different on my sandwich today and I really enjoyed bites that included raisins.

After work, I was walking home in the cold drizzle debating wether or not I felt like going to the gym with a cold coming on. Then, right in the middle of the street, my beloved bag fell to the ground.

The stitching securing the shoulder strap to the side of the bag ripped. I actually didn’t tell you guys this, but the same strap ripped a few weeks ago as well; the bag was under warranty, so I exchanged it for a new one. Since then, I have been very careful not to stuff it too full or yank it around by the shoulder strap, so I was livid when the new one broke again today.  I didn’t even have my laptop in it so it couldn’t have been that heavy.  I was so annoyed that I marched straight to the mall and returned it:( I’ll really miss him, but I know that if  he broke twice (in the same spot) there’s no way this bag would last in the long run. And to me, bags are an investment! The good news is I get to shop for a replacement:) Any recommendations?

Matt and I just finished the last of the apple crisp. It was delightful. I didn’t think I’d ever say this, but it might have been a little too sweet. Don’t get me wrong, the crust was awesome, but I need to put way more apples in between the two layers to bulk it up and balance out the crust.

    How’d the chicken salad taste? I always try to make chicken salad in different ways, but it always comes out bland.

      Great! It was bland at first, but I just kept adding the spices and another handful of raisins and it was good.

    I love the addition of butternut squash to the chicken salad… very harvest-appropriate!

    I usually buy bags at T.J. Maxx or Marshalls to save $, but I finally splurged and bought a Longchamps bag last year. They are fantastic bags: waterproof, rip-proof, comfortable to wear on your shoulder, and attractive. I highly recommend them!

      Thanks! I actually have a little Longchamp purse and have debated all summer whether or not I want one for work. I do love them, but was hoping to find something with more pockets…but I may give in!

    Question … Did you use plain yogurt? I have a feeling you did but I’d figure I’d ask. And I have this D and B bag.

    I love it! It’s def more of a work bag though. Things don’t get lost and there’s a divider in the middle with lots of pockets!

      Yup, I used plain Greek yogurt. I love the bag and its on SALE! Hmmm….
