My, oh my, did Kath stumble upon something glorious with this Kodiak cake + pumpkin combo. We stirred pumpkin pie puree (with the appropriate spices already added by Whole Foods) into the batter and these pancakes were fabulous, not only in taste, but in texture too!!!!!!
Topped with my birthday present, this was a breakfast of champions:)

I had quite the productive day at work and then headed to the gym for a stairclimber warm-up and a cardio + abs class. Note to self: do not take 3 weeks off from a cardio dance class because you miss new moves and look even more ridiculous in the mirrors. Also, I guess no one else wears mesh basketball shorts anymore because I was the only person not wearing a sexy tank top with booty shorts…another reason why I looked silly doing the scoop.
I had dinner alone again tonight, as Matt is swamped with work:( I made mac + blue cheese with broc and corn. I think these spirals are my favorite of the mac + cheese varieties (Back to Nature brand?).
After a few weekends of late nights, I’m actually quite excited to just see where Friday evening takes us (aka drink beer and probably fall asleep on the couch before 11). Anyone have fun weekend plans?
