Good evening,
I’ve been surprisingly upbeat for the first week back after the holidays. Maybe it’s been the sunny, not-freezing weather? I hear snow is on the way though.
I can already tell that my vacation-induced sleep surplus is running out quickly because I was dragging while babysitting today. If only I could stay rested during the work week! Any tips for getting everything accomplished (without working on my to-do list at work or giving up cooking, blogging,or working-out) while still getting 8+ hours? My internship class starts back on Monday and preliminary job searching in NC has already begun, so it’s only going to get worse…
Dinner was a quickie combo of mac + cheese with peas and maple roasted brussels.
I’m beginning to love brussels sprouts (I can’t believe I’m admitting this). Isn’t it cute how the shells are holding the peas?
Loved the simplicity of this dinner, but I had to go back for puffins because it wasn’t quite enough.

Your dinner looks delicious, by the way. I wish I could start eating brussels sprouts, I just can’t get passed the gross sliminess they always had when I was forced to eat them as a kid.

I guess the only tip that I can offer you about getting things accomplished while keeping your sanity and not giving up things you love is to keep your priorities straight. If something doesn’t excite you, don’t feel like it’s a must. Kinda lame, right?
