Increasing Productivity

I truly believe that vacations are essential to life. Today, I was much more productive than I’ve been in weeks. I knocked out a lot of stuff at work, and despite almost giving in to a sauna nap, I spent some time on the stair climber and even managed to save some energy for cooking and cleaning.

Wine county left me with a serious craving for a french baguette, so I worked one into my dinner yesterday. I’m a big fan of having fun sandwiches for dinner, but Matt’s rarely in the mood, given he eats a sandwich every day for lunch. I think he was having vacation withdrawal too because he was the one who suggested we splurge and spend $4 on fresh mozzarella:)

I marinated the tomatoes for about an hour in balsamic, olive oil, basil, and a tiny bit of sugar.

Mmmm…the bread and fresh cheese were soo satisfying, but now I have a craving for Europe.
For tonight’s dinner, it was back to my usual naan flatbread, this time topped with pesto, dates, and blue cheese.

Other than cooking and getting back into the swing of things at work, there’s really not much going on. I can’t believe its March already…my time here is ending soo soon: /

    Yum! That sandwich looks SO GOOD. I’d never think of using naan as a pizza, but that’s a great idea!
