I think I’ve found my favorite black bean burger. Last night, I made Anne’s Mexican Black Bean Spinach Burgers (although I only used a few leaves of spinach) and they were fANNEtastic:)
Maybe it was the lemon juice or maybe it was the thick, freshly made buns I picked up from the bakery at Whole Foods, but I just loved these!
I topped my burger with white cheddar and jalapenos and made an awesome batch of parsnip fries on the side. I just love the sweetness of parsnips and I might even like them better than regular fries (but not sweet potatoes!).
Although, I had planned to go out for a drink last night, I got the sleepys at my usual time, and since Matt was pretty tired too, we just drank beer on the couch. We pretended we were at a bar though and talked…rather than watching mindless tv (because sometimes we do wayy too much of that at night).
We sampled another Lagunitas, which I could really appreciate and happily gulped down. But, it was a little too bitter for me. We also had a local beer from the Blue Hills, which was very wheat-y and a little too summery for such a cold night.
I worked all.day.long on my case study but it’s basically finished!!!! I worked at Panera and Matt was kind enough to buy me a jalapeno cheddar bagel + cream cheese during our working lunch. I was able to fit in a nice 3 mile jog on the treadmill, despite lingering stomach pains from another round of treatment:(
I’m going to recover for the next hour and then go out to dinner and meet friends for the big game!!!! See ya Sunday.
