Good morning, good afternoon, good evening friends…
I had a fast and fabulous Monday. Do you ever wonder why some days fly by and some drag on?
Work was work. Afterwards, I did some online furniture shopping and then knocked out 3 miles at the gym. Matt got a last minute offer to play soccer, so I was on my own for dinner. I didn’t want to thaw the fish I had planned for the two of us just for me, so I scrounged around for something that wasn’t in the meal plan. We picked up a new item from Trader Joe’s this week – South Indian bread called Malabari Paratha. It looked like a combination between naan and a tortilla, so I figured it might be good with a veggie burger as some sort of wrap. Unfortunately, the bread was kind of flaky and very oily, and I ended up having to rip it into small pieces and then use it to pick up the chunks of veggie burger, just like the Ethiopian method. I made a huge mess of the meal and thus the lack of photo. However, it tasted amazing. I topped it with a little feta and bbq sauce and it was just scrumptious. I will eat this combo again, even if I look like a caveman doing so.
Anyone watching the bachelorette this round? I somehow always get sucked in even though I can’t stand the first few episodes. Looks like a nice selection this time.
It was quiet out there today. Any news?
