Toaster Taquitos

Just popping in to say hello – I’m packing again and I’m hitting the road right after work tomorrow. It’s my mom’s birthday weekend, so I’m meeting my parents and sister at Bald Head for cake, food, fun, and beach! And this time, I might even get to put my toes in the sand because the forecast looks great!

In the interest of time, I heated up some TJ’s black bean taquitos, along with some sweet potato chips and salad for dinner. I tried two in the microwave and two in the toaster, and the toaster ones were worlds better. Fun dinner! I’m excited to have Matt back from his practicum though, so we can eat dinner together. Gotta go prepare for another IEP meeting for tomorrow. See ya from the island!
