Plantains were the missing ingredient from my mexican bowls all this time. This version – sweet potato cubes, quinoa blend, black beans, corn, tequila salsa, and veggie chips was divine.
I am really tempted to take a pictures of this bruise/injury on my tail bone just to show you! Its bruised and making sitting very uncomfortable.
We have a three hour delay tomorrow because of ice. This is both a wonderful thing [sleep] and a very bad thing – I’m supposed to fly to Baltimore to see my grandmother.
Dates dipped in sunbutter have got to be one of the best combinations on earth. Seriously, I think those sweet and salty chunks are one of the only reasons I’ve ever gotten out of bed for a 6am workout.
My apartment is a mess, so I’m just giving up on it for now. But, all the laundry is done for next week.
One day, when I have free time and extra money, I want to take a cake decorating class.
Spring is soo close.

February 23, 2013 at 1:56 pmI am definitely with you on the sweet and salty combo; yin and yang wasn’t invented for no reason ;p Also, I would definitely tuck into a healthful and scrummy meal like that… It has my name written all over it 🙂 I feel ya on the tailbone- I landed right on ice on my tailbone while snowboarding over xmas break, and it literally felt like I had cracked it… It hurt for like 3 weeks, and then one day, the pain suddenly vanished. Hang in there because when that day comes, you’ll feel like a million dollars!
