I received a bunch of requests for more meals, so here they are! I’m always curious to see what other people eat, especially with little ones. There’s nothing pretty or fancy about these meals – During the week, I’m all about fast, healthy-ish meals, that won’t break the bank.
Breakfast Every Day
I’ve eaten the same breakfast with some variation for the past six years! Overnight oats made with almond milk, raisins and cinnamon and topped with sliced banana and a ton of drippy, salted peanut butter. I add the banana and pb in the morning and microwave it, and it’s always the best meal of the day – tastes like pure dessert to me.
Emerson usually has a banana to start and I often drizzle peanut butter or almond butter on top. Sometimes she has other fruits or avocado, and then I give her plain yogurt with either peanut butter, jam, baby oatmeal, or some veggies (from a pouch) stirred into the yogurt. The past few days, I’ve made Em her own portion of overnight oats and she seems to like them.
Sunday
Lunch
When I don’t have leftovers or something specific planned, I give Em a farmer’s lunch of odds and ends – in this case: frozen peas, a slice of goat cheese, pear, avocado, cheddar bunnies dipped in hummus, and a small spoon of peanut butter.
I had scrambled eggs with spinach as tacos – my go-to lunch when I’m all out of food is eggs. Plus corn chips with hummus.
Dinner
BBQ salmon with quinoa and roasted cauliflower and broccoli. Plus wine for the adults.
Monday
Lunch
Leftover salmon and cauliflower plus avocado and pear for Emerson.
A kitchen sink salad/bowl with quinoa, chickpeas, arugula, avocado, a little leftover salmon, and the bottom of a bag of sweet potato chips on top:)
Dinner
A veggie curry I adapted from this recipe. Emerson surprisingly loved it.
Tuesday
Lunch
Emerson will rarely eat eggs (and actually has a slight allergy, but the doctor told me to keep giving them to her), so I tried something new with a mini frittata with spinach. She ate about half of this, which is better than when I scramble them. She also had avocado, cheese, and blueberries.
I had a kale salad massaged with olive oil (only way I’ll eat raw kale) topped with avocado, pistachios, manchego, and a veggie burger plus red, hot, and blue chips.
Dinner
Banzo chickpea pasta with peas, tomato sauce, and 1/3 block of cream cheese stirred in (needed to get rid of it).
Wednesday
Lunch
More Banza pasta with tomato sauce and frozen spinach, cheddar bunnies dipped in hummus, blue berries.
The end of a container of arugula with nuts and olive oil + rotisserie chicken made into avocado chicken salad on toast. Chips + hummus while prepping Em’s lunch.
Dinner
It was a snow day, and Matt was home early, so we ordered takeout! Em had the gf mac with a sweet potato ‘cheese’ sauce from By Chloe plus broccoli and kiwi
.Matt and I split sweet potato fries, a black bean burger, and the rest of the mac plus beer.
Thursday
Lunch
Emerson had roasted butternut squash, avocado, quinoa with hummus, and pear.
I had massaged kale with quinoa, dried apricots, roasted butternut, and avocado. Plus chips and hummus while I was prepping Em’s lunch (notice an addiction trend here?).
Dinner
Crockpot pork with brussels, apples, and roasted butternut squash. Emerson didn’t eat the pork, so I gave her avocado and a small pb + j.
Not pictured: after dinner bowls of cheerios or panda puffs with peanut butter, dates with peanut butter, dark chocolate, Lara bars, banana bread, Manchego and crackers for snacks.
