Thank you all for your lovely comments on my announcement. I love hearing from you guys, and a lot of the comments about being pregnant with a toddler versus having a newborn with a toddler were reassuring that I’ve got this:)

We got lots of April showers over the past three days, but that didn’t stop us from having a fun weekend. Sadly, the neighborhood Easter egg hunt was cancelled, but we still hosted the brunch after-party we had planned. It ended up being a nice rainy day activity and all the kiddos enjoyed some play time together.
Emerson was very excited to host and went searching in my closet my some party heels. She actually walks pretty well in these 3 inch heels from my bachelorette party.
I made a few dishes – pesto pasta and a chicken sausage and spinach egg casserole – and then ordered some gf carrot oat muffins and a strawberry cheesecake from our local bakery. There was also fruit and a cheese plate.
It seemed to be just the right amount of food, although we have about 8 pieces of cheesecake in our freezer now.
We also had mimosas and mocktails with a new peach mint shrub mixer I made.
After Emerson’s nap, the rain cleared and the Easter bunny made an appearance at a neighbor’s house. I had a pep talk with Em on the way over about how friendly the Easter bunny is and how if she felt scared, I’d be right there with her. She was saying, “I’m not gonna cry,” over and over as we approached and then didn’t! She still kept her distance, but it was a much better experience than last year when she was hysterical.
Emerson and I hurried home to meet Matt (who played in the Davidson alumni soccer game) and our babysitter so we could go back up to Davidson for a double date with friends at Kindred.
The restaurant lived up to the hype, although the portions were soo small (I think I’m just extra hungry lately). I had an incredible mocktail (lemon, mint, honey, ginger beer) and this flounder over sweet and sour artichoke stole the show for me. We also had a cheese board, potato wedges, snap peas, and a gf pasta dish with pork and vegetables. I finished the night off with more cheesecake from brunch.
Sunday was lazy, and Matt and I cleaned the house and got things in order for our upcoming trip to the beach. I got a pedicure during Em’s nap, and then went to the mall searching for some more spring-like closed toed shoes to wear with jeans around the hood. I didn’t have any luck and ended up ordering a pair of Toms espadrilles from a mall bench:)

April 18, 2019 at 3:04 pmHere’s on of the recipes my friend shared with me. Generally, you can play with anything that is a fruit and an herb.
Peach – Rosemary Shrub
1 cup sugar
1 cup water
1 cup apple cider vinegar
12 oz frozen peaches (fresh if in season)
3 large sprigs of rosemary
Combine sugar, water, peaches & rosemary. Cook until combined and color of liquid is peach color. Likely 10-15 minutes.
Off heat, add vinegar.
