Hummus on Hummus

Cooking The Working World

Hi, How’s the going? I can’t believe it’s Friday again (almost). The four-day work week is so nice, but makes for more work crammed into four days! Work is picking up and I’m getting more comfortable with my buildings. But I’m still completely wiped out. I’ll just never be good at getting up at 6. I want to be good at it, I really do. At least I’m good at eating. I wanted to make something new this week, so…

Huevos Rancheros

Cooking

Got my weekly ‘bowl’ fix, but this time over eggs instead of rice. I loved the change, but just hate how eggs get cold so quickly. So my first week of work is almost over, which called for wine! Matt took me out for a glass (malbec, duh) and we pondered our future and savored the free time before he starts school again. I’m trying to convince him to help me address save-the-dates tonight. Speaking of wedding, I’m in a…

Back At It

Cooking The Working World

I’m back to a normal person again – the end of summer vacation was a rude awakening, literally. It was tough transitioning from Colorado time to a 6am wake-up on Monday, but I’m finally feeling like myself again. As for the new job – to say I feel overwhelmed is an understatement. Of course it’s only been two days, but the whole working in three different schools thing is a bit more confusing than I had anticipated. Let’s hope I…

Cooking

There’s a scary storm out there. I keep trying to do things on the internet and whenever the power flickers, the wireless signal goes out. Good thing I already made my dinner. Because I needed the microwave! I was inspired by Caitlin’s twice baked potatoes today, and immediately went home and made a sweet potato version – I mixed corn relish into the taters and topped them with jack cheese. Soooo good. Also, a good old masala burger with avocado.…

Low Key

Cooking Life

After eating out a bazillion times with the parents and the birthday/holiday celebration in the middle of the week, I was in need of a low key weekend. Friday night, Matt and I met two Atlanta friends for burgers at the famous Vortex. I had the guac black bean burger and it was honestly one of the best veggie burgers I’ve ever had. I also looved the zucchini fries on the side. Too bad this left me a bad stomach…

Atlanta Stay-Cation

Cooking

Happy holiday week! Is anyone else having the heat wave? I’ve just about sweat through everything I own. So, back to the weekend. I arrived back in Atlanta on Thursday with my parents, feeling quite excited about the recent development (thanks for the comments:)) Matt was working late, so I took my parents to a New Orleans oyster house. We sat outside, pretending to be on Bourbon St. The roasted oysters were great! I hate the raw ones because I…

One more week of work!!!! So pumped to be on summer vacation so I can dream about wedding details! Did I mention we have a wedding date, because we have a date! June 1, 2013 – I will be a bride (knock on wood). That’s tomorrow! Matt’s browsing coral bow ties as we speak:) I’m thinking of trying on some dresses in a few weeks (just for fun). Next on my to-do list is picking out save-the-dates and making a…

Howdy. How are you? You know it’s bad when you take two Tylenol PM and still can’t sleep. Talk about a zombie. Now I know why Michael Jackson kept upping his dose. Miraculously, I felt a billion times better when I woke up and got to work today. I’m really plowing through my to-do list and I will meet all my deadlines very soon! T minus 3 weeks to go!!! After work, Matt helped me throw together a fabulous summer…

Dinner for Mother

Cooking

Last night, my dad brought over champagne and we celebrated my mom! I actually haven’t cooked dinner for that many people in my lifetime – it’s hard work! But I chose an easy spread of foods and did most of the prep work in the afternoon. We had salad with strawberries, blue cheese, and walnuts with a simple dressing of olive oil, balsamic, honey, and mustard. Rice made with half basmati and half of Trader Joe’s lemongrass rice (so delish).…
