Cinco, Derby, Q Shack

Cooking

Cinco de Mayo was a smashing success! We had a huge downpour right before our party, so all of our guests arrived wet, but after a few margaritas everyone was warm and cozy inside. I made Cristina’s  quinoa black bean salad as well as sweet potato black bean enchiladas, and some chocolate dipped strawberries. I also made classic red wine sangria with rum. I was busy drinking my friend Maria’s ‘get naked’ margaritas, but I tried some at the end of…

Let Them Be Tacos

Cooking Shopping

Got my teeth cleaned today. And my car inspected. I can’t believe my car is 14 years old!! It will be a sad day when she stops working. After my morning errands, I met my mom at the mall. We enjoyed lunch at Panera, and then I had to take my laptop to the Apple store because Safari has been acting up. I’m hoping the problem was resolved after reinstalling the operating system. Seems ok for now (knock on wood!).…

Almost Summer

Cooking Ramblings

Ya know, just a quinoa bowl with chic sausage and roasted veggies. With a little bbq sauce added later. Gotta have a big bowl of something at least once a week. I can’t believe it’s almost summer! This became very evident at work today, when I found out about two more referrals. I’ve got six cases to go with barely five weeks left. It’s crunch time. In addition, I’ve got two really fun trips coming up in May, so this…

In A Pot

Cooking

Though I usually babysit on Tuesdays, I spent 8 hours with the little one today. I usually do a half day with two kids, and today I did a whole day with one. And it was sooo much easier! Made me miss my nanny job in Boston. I took the stroller out for an hour walk in the gross weather this morning and managed to get the baby down for two 1+ hour naps. It was a lovely way to…

Time for Tacos

Cooking

Taco night! I never buy ground beef and was so excited to have beef tacos tonight. These were a staple in my house growing up, so they most definitely remind me of being a kid! I used a homemade taco seasoning of sorts, blue corn shells, and peach mango salsa. On the side: a salad with TJ’s amazing corn relish. I couldn’t resist having sweet potato chips too – to go with the theme:) Matt couldn’t make it home for…

Toasted Coconut

Cooking

Fruity beers are always hit or miss. They are either too light and watery or too syrup-y. But this was nutty and subtle and perfectly balanced. It’s a nut brown with toasted coconut!! Beer on the weekdays tastes extra good. If only I were drinking it in Hawaii. On the menu this evening was TJ’s crab and cheese stuffed flounder with Mediterranean couscous. Matt and I love this because the inside is just like crab dip…sooo cheesy. Since Easter, I’ve…

Monday

Cooking

T’was a peaceful Monday in Durham. I did, you know, Monday things. Like going to the grocery store and packing lunch for work. And smiled about what a nice weekend it was. And I didn’t throw together dinner at the last minute. I got out the food processor and made black bean burgers on delicious Great Harvest buns. Sitting outside at night has made dinners much more pleasant! I feel like I eat more slowly and really enjoy the food…

Flavor & Chew

Cooking

Boy am I glad I don’t have to pack a suitcase and travel tomorrow! Weekend trips are a blast, but weekends at home are sooooo nice. I’m excited to just hang out with Matt and friends, and enjoy the warm Durham spring. I’m four for four with headaches on Thursdays – I’m starting to think there’s something about my office (fluorescent lighting and no windows, stress?) that’s affecting me. I opted to take some medicine and a stroll outside and…

Refried Pizza

Cooking

As you may have figured out if you’re a reader of Kath’s blog, the practicum Matt was doing was actually in India! He’s been gone for 13 days and he’s finally home!!! It was a bit lonely here, but I kept myself busy with two weekends with family. Last night, we celebrated his homecoming with a beer. He came bearing Indian jewelry and scarves, as well as Indian desserts! These were definitely different, but really good! My guess is some…
