Nothing like a good meal and a cozy night on the couch. I threw this box of risotto in our WF cart this week for something different… The risotto was topped with fresh shrimp sauteed with roma tomatoes and sprinkled with grated parmesan = perfection. Oh, and the last glass of Rhode Island Red left over from Sunday completed the gastronomic experience. That’s really all I have to say:)…

Hello, Hello, I’ve had and wonderful weekend with lots of festivities. Sadly, I left my camera at a friend’s house, so you’ll have to wait until tomorrow for the full recap. Thursday is a nice day. Something about being over the hump just brings anticipation and a little bit more productivity. I’m almost finished with a big report that’s due the week after spring break, so I feel good about my work load. I’ve got two more evaluations on my to-do list for May and then I may only have one or two more after that! I’m going to let out a big sigh of relief when my last IEP meeting…
Today was cozy. Ya know how every once and a while a nice rainy day just feels kinda fun? The main reason I felt this way is because babysitting was cancelled, so I didn’t have to walk my usual mile to pick up the little guy! Unexpected free time is the best. I read blogs, watched house hunters, and did a gentle bike ride at the gym. And then I made fANNEtastic black bean burgers on the wonderful brioche buns…
I never feel like the gym on Tuesdays. I left after 15 minutes and took a walk. And then I found myself in Anthropologie, drooling. Luckily, Matt intervened and whisked me away to Whole Foods to buy fresh haddock. Dinner was ready in just ten minutes. Pan seared haddock + my favorite apricot glaze from this recipe + veggies + couscous. Quick and delicious. I’m so mentally ready for spring break next week. And then I remembered I probably will…
Mmmm…70 degrees feels soooo good. I laced up the news shoes after work and went for my first run outside (in Boston) of the year. My shoes felt pretty good. Not fabulous, but solid enough that I think I’m going to keep them. Today I went to the dentist! Other than my poor receding gums, my teeth are doing just fine. The floss they give you is so misleading though…it looks like a full size, but there’s really only a little bit inside. After the dentist I went and tried on new running shoes!!
