Super Sweet Potato Black Bean Nacho Bowl

Cooking

To me, the super bowl means only one thing: nachos. But instead of going out this year to spend $12.95 on some greasy platter with old chili on top, I decided to make a heartier version at home. The key to the awesome flavor combination was WF’s spicy black beans, the sweetness of the peach mango salsa combined with the perfect pillows of sweet potato, and a local salsa-infused white cheddar. I cooked the cubed sweet potatoes just as I…

Take 2

Cooking

Although it’s cold and snowy outside, I swear the sun is shinning brighter these days (maybe because the days are getting longer?). There’s even talk of near 40 degree temperatures this weekend! Two more weeks until “spring” break. Not that I’m counting or anything. My lack of productivity at my internship today confirmed that I work much better at home. I kind of went through the motions of work, but didn’t get too much accomplished. I did, however, make it…

Time is of the Essence

Cooking

I’ve realized the four day work week is just perfect for me. Each snow day has left me feeling refreshed, productive, and well-rested. I’m much more efficient at writing reports when I’m home, so I’m finding that I can finish twice as much work in half the time without the distractions and un- pleasantries of sitting in an office. And when I can do work twice as fast, there’s more time in the day for the more meaningful things – time…

Cheesy

Cooking

My dearest readers, Today was quite pleasant. We had a little party at work that involved cake and brownies, and I made it to spinning class after work. Honestly, I don’t have much to report this evening, except that I’ve never seen so much cheese. I attempted Kath’s recent Mac + Cheese recipe, and boy was it fun to stir. Unfortunately, Matt is not a fan of any cheese even remotely related to brie, so I went with a swiss…

First Frittata

Clothing Cooking

Tonight I attempted my first frittata! I followed Kath’s instructions, but mine doesn’t look as good as hers… The base was shredded chicken that I covered in pesto, and spinach! I used 2 eggs and 2 egg whites and topped it with white cheddar before moving the pan to the oven. Kath’s seemed a lot thicker than mine, so I’ll def. use more eggs (or more real eggs in the future). The chicken was a great addition, but the rest…

Mix

Cooking

Snow and rain do not mix. Today’s weather was disgusting and it put me in a foul mood. My IEP meeting got cancelled and I stepped in an ice puddle that came up to my calves. Note to self: don’t go outside until April. Needless to say, I skipped the gym because my toes were burning from the freezing cold water that got trapped in my shoe and I couldn’t bear the thought of walking home and then going back…

Train to the Top

Cooking Travel

Good morrow to ya. Sooo, I’m traveling to Portland, Maine today via Amtrak because Matt’s friend Jeff invited us skiing!!!! Jeff grew up in Portland, so we’re going to be spending tonight at his house and then skiing at Shawnee Peak on Sunday. Tomorrow will only be my fourth ski trip ever, so wish me luck! Growing up in the south, I didn’t ski for the first time until college, so I still get nervous when I get to the…

Surprise Friday Night

Cooking

No work tomorrow!!! Although we will have to make up the day in June, I’m hoping my workload will be a bit lighter on the last day of school and maybe I won’t need to go… The nice thing about a snow day is that it kinda of forces you to relax because I’m guessing that not a whole lot will be open. I’m planning to sleep in, finish writing a report, get a decent work-out in (my gym time…

Out of Season

Cooking

Well it was bound to happen – I left my computer cord at work, so I now have a dead computer with no way to revive it until Monday:(  I’m still able to blog  Matt’s computer, but I don’t have the pictures from this week and thus the lack of a Fashion Friday post… Other than that, Friday was good and very low-key.  My meeting went surprisingly well (we found the child ineligible for special ed) and I got quite…
