I can’t breathe! It’s been a while since I’ve had a cold and I forgot how suffocating it is! The upside is that I feel like all the sinus pressure that has been building up all spring is now being released, if ya know what I mean. The rest of me feels great though, so I’ve been itching to get out of the house. Luckily, Matt and I had a dinner date last night at the Italian sandwich shop, Toast.…
Dinners
Last night, my dad brought over champagne and we celebrated my mom! I actually haven’t cooked dinner for that many people in my lifetime – it’s hard work! But I chose an easy spread of foods and did most of the prep work in the afternoon. We had salad with strawberries, blue cheese, and walnuts with a simple dressing of olive oil, balsamic, honey, and mustard. Rice made with half basmati and half of Trader Joe’s lemongrass rice (so delish).…
Sometimes, I get tired of people (and Doctors) telling me that I’m stressed. I mean, I went to school – stress is that feeling when you have a million exams and tests piled up, right? I haven’t had that school-stressed-out feeling in a while, so I just assumed that I don’t get stressed much anymore. But lately, I’ve been re-thinking that. Perhaps stress just feels different now, especially because I stress about different types of things? I think I can…
It was one of those days were I just wanted to come home from work, sit on the couch, and eat. So I did! It’s ok to eat dinner at 5:05, right? I heated up some leftover sweet potato and black bean enchiladas. I swear everything we made for our fiesta tastes better days later. Yum. I battled the urge to fall asleep for almost an hour, and finally let myself take a ten minute nap. I just crash after…
Happy Tuesday. After a failed day of babysitting (kid got sick = I went home), I tackled my to-do list and got in some extra relaxation. Matt and I leave for Atlanta in three weeks, so we paid a visit to Hillsborough to see my parents and have dinner. I had also hoped to vote, but when I let it slip that I live in Durham now, I wasn’t allowed to vote in Hillsborough where I’m registered to vote (duh,…
So last Friday, I mentioned that we went to the famous Magnolia Grill. It’s closing at the end of the month, and it’s THE restaurant that put farm-to-fork southern cooking on the map. We had a gift card…I knew we had to go. The restaurant was packed to the brim, but we were seated at a small two-top in the corner of the bar. The waitress rushed over to us several times while we were looking over it to inform…
Cinco de Mayo was a smashing success! We had a huge downpour right before our party, so all of our guests arrived wet, but after a few margaritas everyone was warm and cozy inside. I made Cristina’s quinoa black bean salad as well as sweet potato black bean enchiladas, and some chocolate dipped strawberries. I also made classic red wine sangria with rum. I was busy drinking my friend Maria’s ‘get naked’ margaritas, but I tried some at the end of…
Good Saturday morning to ya. Sorry to go MIA on you Thursday night. I haven’t been dealing with stress well lately (well at least my body is telling me that) and decided to skip blogging when I got home late. We went to see Wicked at the Durham Performing Arts Center!! We dined al fresco with two of our friends who also went to see the show, and kinda lost track of time over dinner! We hurried to the theater,…
Matt is officially finished with his first year of business school! So, the last Fuqua Friday of the year was held this evening. The food was decent – black bean burgers, spicy sausage, corn on the cob, salad, roasted potatoes, and fruit. I went back for some vanilla ice cream that was fabulous. I must buy the lowfat/froyo versions too often, because this ice cream tasted like pure cream. It was heavenly. Not many people were there tonight, but all…
