Time for Tacos

Cooking

Taco night! I never buy ground beef and was so excited to have beef tacos tonight. These were a staple in my house growing up, so they most definitely remind me of being a kid! I used a homemade taco seasoning of sorts, blue corn shells, and peach mango salsa. On the side: a salad with TJ’s amazing corn relish. I couldn’t resist having sweet potato chips too – to go with the theme:) Matt couldn’t make it home for…

Toasted Coconut

Cooking

Fruity beers are always hit or miss. They are either too light and watery or too syrup-y. But this was nutty and subtle and perfectly balanced. It’s a nut brown with toasted coconut!! Beer on the weekdays tastes extra good. If only I were drinking it in Hawaii. On the menu this evening was TJ’s crab and cheese stuffed flounder with Mediterranean couscous. Matt and I love this because the inside is just like crab dip…sooo cheesy. Since Easter, I’ve…

Hot Bar

Life

Seven hours of report writing later and Tuesday is over. Whew! That was not a fun day at work. But, the good news is that I’m all caught up with report writing for the first time since I started my job in January! Good thing I’ve got three new referrals coming next week:) Dinner was a special treat at Whole Foods. I met new friend and fellow blogger Katie at the hot bar! I got my usual bowl, with a…

Monday

Cooking

T’was a peaceful Monday in Durham. I did, you know, Monday things. Like going to the grocery store and packing lunch for work. And smiled about what a nice weekend it was. And I didn’t throw together dinner at the last minute. I got out the food processor and made black bean burgers on delicious Great Harvest buns. Sitting outside at night has made dinners much more pleasant! I feel like I eat more slowly and really enjoy the food…

Easter Eats

Uncategorized

Hola, Happy Easter. I’m currently blogging from bed, where I’m in a cake coma. A glorious cake coma. Let’s rewind though and I’ll tell you about my weekend. It started like any weekend – a spinning class and dinner at Fuqua Friday. Matt had a soccer game on Friday (Duke beat UNC), and I watched [freezing cold] from the sidelines with the other lovely Fuqua partners. It was a low-key Friday, because…on Saturday, Matt’s parents came to visit from Maryland!…

Take A Hike

Durham

Despite some looming showers, my mom, dad, and I made it on a hike today. We did a damp three mile loop at Umstead Park and emerged from the woods to sunny skies! It was nice to be out in nature and there sure weren’t many other people out hiking on a chilly Thursday morning. We were hungry for Mexican food afterwards, so we went to Dos Perros in Durham for lunch. I’ve only been once before, but I loved…

Failed Run + Hanging Worms

The Working World Travel

I’m on spring break yall! Not that it means that much when you work part time, but still, it’s nice to have next week off and no babysitting because the family is traveling. Matt still has classes and it’s not like we’re rolling n dough, so we’re not vacationing or anything. But, we are going to Charlottesville to drink wine and hang out with Kath and Kanz! But first, a lovely Thursday night dinner on a beautiful spring night. I…

The Best

Uncategorized

Your comments from last night? The best way to make me feel better about a silly spill. Goat cheese and sun-dried tomato ravioli: hands down the best flavor from the Trader Joe’s collection. Beer left over from Christmas: the best remedy for chilly weather and a long day. The Hunger Games: the best book-to-movie I can ever remember. Getting in bed when you’re really tired and your feet are cold: among the best of the best things in life. Night.…

Mad

Life

Don’t you hate it when you get really mad at yourself? First, can I tell you how good this french bread pizzas was? I’ve been craving this since my childhood I think. I was able to get a fresh garlic and parmesan baguette and I topped it with pepperoni of sorts, mediterranean feta, freshly grated romano cheese, and slices of provolone, basil, and oregano. Oh so satisfying!! And then I got furious at myself! You see, I had spent almost…
