Thoughts on a Thursday

Cooking

1. It’s only 8, and I’m already on my second Christmas movie on the lifetime movie network. I just love seeing the holiday parties, the festive attire, and the perfect houses decked with candles and lights. 2. I’ve been extra hungry all week and I’ve had to supplement dinner with a bowl of cereal. I wonder if it’s seasonal or hormonal? 3. You must make Angela’s avocado pasta! It’s creamy and bursting with flavor and made me feel like I…

Penciled In

Cooking

Rainy day = going out for a beer! Matt penciled me in for an hour this evening, so I’ve got to change into stretch pants and head out the door. But first, a calzone.    I stuffed this with pesto, cheddar and colby, arugula, and banana peppers. But the dough, oh the dough, is what made this awesome. Whole wheat pizza dough has redeemed itself. Maybe it just tastes better in calzone form? Looks like a huge empanada! He could…

Una Cerveza

Uncategorized

Tuesdays are never my friend. I’m not sure why, but I’m never feeling my best. And today was hormonal and a Tuesday. It was really a good day though; I just didn’t feel like doing any thing and my work tasks were bugging me. I’m usually just a social drinker, but tonight, a solo beer was in order. The choices in the fridge were this or Coors (left over from Halloween). I actually do enjoy a Negra. Especially on la…

The Last of the Turkey

Cooking

Thanks to Thanksgiving, I’ve been feeling more motivated to cook! Leftover turkey = turkey and rice casserole. I’m tired of turkey; it needs to go!    I picked this recipe because it was easy and relatively healthy. I added some pepper jack to the top because I can’t live without cheese! It was a bit bland, but hot out of the oven and mixed with the almonds and blue cheese from my salad, the whole pile tasted pretty awesome. I…

Churning

Cooking

A beautiful sweet basil pesto pasta dish with fresh shrimp. Not. This meal just grossed me out and made my stomach churn. Even though I bought the shrimp on Monday, they smelled extremely fishy when I was washing them and I think the smell just stuck with me after they were cooked. I used one of those packets of herbs with olive oil for the sauce (I wanted a change of pace from my jarred pesto) and it was really…

Soup’s On, Locked Out

Cooking

Despite feeling extra extra zonked today, it was a cozy rainy day and I was generally productive. Thanks to my space heater, rainy days no longer mean I’m freezing at my desk. I’ve loved the warm weather, but it’s also nice to have colder days during the holidays. I’ve found myself thinking of Boston often lately, as I have fond memories of snow flurries, festive lights and Christmas trees, and holiday shopping on bustling Newbury St. Needless to say, I…

Stuffing Bread & Split Ends

Uncategorized

I know, I know – what a beautiful dinner. But that dog right there is one of the best sun-dried tomato chicken sausages I’ve had and it’s on the doughiest special Thanksgiving stuffing bread from Great Harvest. I inherited loaves of bread that couldn’t be sold after the bakery was closed for the long weekend. All of I want for dinner is this bread! Tis the season for comfort food. But even better than bread is pie and there’s one…

Thanks on a Thursday

Cooking

Between 2 and 9 o’clock, I had tastes, sips, or pours of all of the following – handpicked by Matt’s mom based on my beer page and preferences. I LOVED them all!! Sooo spoiled:) The weather was so beautiful today; Matt and I went for a jog this morning and then we sat outside, just drinking and talking for a good part of the afternoon. Twas glorious and I’m so thankful to be living in the South! Around 4:30, we…
