Beanie Burger

Uncategorized

I think I’ve found my favorite black bean burger. Last night, I made Anne’s Mexican Black Bean Spinach Burgers (although I only used a few leaves of spinach) and they were fANNEtastic:) Maybe it was the lemon juice or maybe it was the thick, freshly made buns I picked up from the bakery at Whole Foods, but I just loved these!    I topped my burger with white cheddar and jalapenos and made an awesome batch of parsnip fries on…

One Day…

Cooking

Howdy. Aren’t you excited to see bright spring dresses on TBT one day? I just can’t wait to be warm! I squeezed in a workout early this morning, so I’d have the afternoon free. It felt wonderful to have an afternoon to myself! I strolled around Newbury, running a few errands and peeking in stores. I’m glad I got some relaxation in today because most of this weekend is going to be spent working on my second to last case…

Cheap, Simple, Delicous

Yo. I’ve not been getting enough sleep this week and I can feel a migraine coming on…or maybe it’s the bad cold Matt’s had this week. Either way, I’ve been tired, but not in the I can’t keep my eyes open kind of way. More in the the backs of my eyes are burning and I’m so tired I feel hyper kind of way. Ya know that kind of tired when you just feel wired? In general, it’s a bad…

A Little Sumpin’ Sumpin’

I hear the shrimp season ended early in Boston this year because the shrimp men caught too many! Must be why they’ve been on sale so often. Anyway, I loved last week’s apricot chicken recipe so much (and it was so easy) that I decided to make a shrimp version this evening. Another winner…I think this was even better than the chicken! I also think this would be great with fish or as tacos. I just love the tropical (Mediterranean?)…

Increasing Productivity

Uncategorized

I truly believe that vacations are essential to life. Today, I was much more productive than I’ve been in weeks. I knocked out a lot of stuff at work, and despite almost giving in to a sauna nap, I spent some time on the stair climber and even managed to save some energy for cooking and cleaning. Wine county left me with a serious craving for a french baguette, so I worked one into my dinner yesterday. I’m a big…

Thoughts from a Thursday:

Cooking

-I never thought 55 degrees would feel tropical. I’ll take it. -Listening to music at work made me 10x more productive today. -It’s weird to think that this time next year I have absolutely no idea what kind of job I might have. -I miss springtime at Davidson -I need new aviators; any recommendations for good ones? -I’m making a rule that spring shopping is allowed to commence March 1st, even if it’s 30 degrees out. -I’m starting the novel…

Ethnic Delights

Dinners have been relatively simple this week. I made a slightly different version of peanut butter pad thai and I liked the sauce much better this time. When I made a pb sauce a few weeks ago, it was chicken-broth based and I just didn’t care for it. This recipe was much more simplistic and made a sweeter, pb-dominated sauce. I used thai rice noodles from TJ’s and a medley of vegetables. One of the best foods in the world…

Wow, I feel so much better knowing I’m not the only person in the universe without cable. Thanks for the interesting comments! Sooo, my IEP meeting ended up being just fine because the parents didn’t show and the team had a more casual discussion without them. I took the day off from the gym so that I could spend my afternoon baking for a girls gathering tomorrow night. I’ll show you the final product tomorrow, but let’s just say I…

Two for Two

Uncategorized

Friends, I had yet another amazing dining experience last night. But first, Saturday… I always preach to my students about the role of relaxation in stress reduction, but I often forget about this little tip myself. So, I made yesterday all about me. I went to spinning class in the morning, made a delicious pear, blue, cheese, and mushroom flatbread for lunch, painted my nails, flipped through spring clothing catalogues for pre-shopping inspiration, and lounged on the couch with my…
