Just Peachy

Uncategorized

Hi guys.  How’s it going out there? I was thrilled to wake up this morning feeling normal.  No back ache, no migraine, no cloud, no upset stomach; and just in time for my vacation in the AM. Breakfast was bran flakes with peaches + coffee; exercise was climbing stairs . I was so excited to pack my second to last purse lunch today!  The sammy consisted of ham + pepper jack with spicy mustard, by the way. It was too…

Dinner in the Dark

Uncategorized

Sorry for the lack of dinner post last night.  I could feel a migraine coming on, so I ended up shoving in a veggie burger and a bunch of snacks in the dark because I didn’t want to cook under the fluorescent light of our 1980’s kitchen. Despite not feeling well in the evening, I had a great day.  I started with classic oats, nut butter, honey, and banana along with more creme brulee coffee. Since it was my last…

Sweet n Spicy

Man, I love dusk.  The sky is Duke blue, the clouds are purple and white, and the horizon is pink; what a beautiful color combination. I’m currently blogging from the patio of one of the dorms on campus because the internet in my apartment is out:(   Despite the sound of the construction going on right beside me, it’s actually nice to be blogging outside for a change. The base of dinner was leaves: I need a salad spinner asap!…

Flavor Failure

Uncategorized

Dinner was enjoyable, but the flavor just wasn’t right.  I wanted to use some chicken I had in the freezer, so I searched Cooking Lite for a simple sauce to put over the chicken.  I found a recipe that only required tarragon, honey mustard, and sour cream so I decided to try it for the sake of simplicity.  We actually didn’t have sour cream or plain yogurt on hand, so I settled for vanilla yogurt reasoning that the spices would…

Two Peppers in a Pan

Uncategorized

Since my farmer’s market peppers were so fat and juicy, I knew they would be perfect for stuffing. I’ve made stuffed peppers a few times before and haven’t really liked them.  The first time, it was because I used green peppers, which taste blah to me.  The other time, it was because I didn’t like the stuffing.  I thought I’d give stuffed peppers one more try tonight, and I’m glad I did because these were great. First, I cut the…

Rainy Adventure

Uncategorized

Rain is not really a big deal, but for some reason the idea of going out in it is daunting; especially when you can’t just hop in a car. The commute to my Wednesday babysitting job takes an hour and involves walking to the bus stop, taking the bus to a T station, riding the T for four stops, and then getting on another bus.  By the time I got to the house at 9AM, I had already had enough…

Surprisingly Sweet

Uncategorized

I spent most of my afternoon straightening my apartment and obsessively checking Cam’s charger for the little green light signifying a full battery.  When he was finally finished charging, I played around with all the fun settings.  The fish-eye setting is pretty cool! And everything is sooo much clearer!  But, my photography still needs some work. People always say good pictures have a lot to do with the photographer, and I’m not a very good one:( Dinner was cheap and…

Tilapia for Two

Uncategorized

It rained all day long.  At first it was dreary. Then, I pretended it was a grey winter day and that I was cozy inside my warm apartment and it became more fun. I ventured outside this afternoon to make a trip to Whole Foods for the weekly groceries. I decided to make something involving these for dinner… I’m not a big vegetable person so I really have to force myself to buy them when Matt is not with me…

Pizza + Packing

Uncategorized

Today the skies of Boston were grey and so was my mood. I didn’t have my usual ‘seize the Monday’ energy and ended up spending a lot of time in front of my computer screen writing my About Me section, surfing the web, and refreshing my inbox in hope of something interesting.  Despite the looming clouds, I finally decided to go take a walk and ended up laying in the middle of the grass in Copley Square chatting with friends…
