Beans on a Bun

Cooking

Today was cozy. Ya know how every once and a while a nice rainy day just feels kinda fun? The main reason I felt this way is because babysitting was cancelled, so I didn’t have to walk my usual mile to pick up the little guy! Unexpected free time is the best. I read blogs, watched house hunters, and did a gentle bike ride at the gym. And then I made fANNEtastic black bean burgers on the wonderful brioche buns…

Night and Day

Cooking

Man, I feel like a whole new human today! Whew! I went into work a bit late and I think the extra sleep must have helped. It also made my day fly by. And, today’s weather felt just like a normal American city’s – I didn’t cringe when I walked outside. It was so pleasant that I took the little one to the park for two hours while babysitting. I read my novel and basked in the sun. Delightful. I…

Back to It

Cooking

Well, my body is back to normal, but I have a lovely runny nose…I’ll take it! T’was another productive day at work. It looks like there might only be one more big wave of testing referrals before the end of the school year. Yippeeee. I headed back to the gym today and got back in the kitchen! I went to a 5 o’clock spinning class, and although I opted to just go through the motions and not really push myself,…

Stuffed with Goodness

Cooking

My day started at 6:20 and my body did not like it. I went in a bit earlier than usual because I had an IEP meeting a little after 8. The meeting went well and the rest of my day flew by because there was a lot of action in our office today. After work, I made it through 20 minutes on the elliptical and two planks before I called it a day. All I want to do is sleep…

Monday Musings

Cooking

Rainy days are much more fun when they’re warm. I’m getting pretty fast at writing psych reports, but I’m not sure that’s a good thing. Is it weird that grocery shopping gives me a rush? I’m eating heart to heart cereal now, and it’s such an interesting invention. I wonder if there’s any story behind the creation of cereal. Has anyone been to Atlantic city? Matt and I might be making a stop there for a night. Last night…

Beanie Burger

Uncategorized

I think I’ve found my favorite black bean burger. Last night, I made Anne’s Mexican Black Bean Spinach Burgers (although I only used a few leaves of spinach) and they were fANNEtastic:) Maybe it was the lemon juice or maybe it was the thick, freshly made buns I picked up from the bakery at Whole Foods, but I just loved these!    I topped my burger with white cheddar and jalapenos and made an awesome batch of parsnip fries on…

Thoughts from a Thursday:

Cooking

-I never thought 55 degrees would feel tropical. I’ll take it. -Listening to music at work made me 10x more productive today. -It’s weird to think that this time next year I have absolutely no idea what kind of job I might have. -I miss springtime at Davidson -I need new aviators; any recommendations for good ones? -I’m making a rule that spring shopping is allowed to commence March 1st, even if it’s 30 degrees out. -I’m starting the novel…

Burger + Bacon

Cooking

Weekends just come and go so quickly:( Around eight last night, I found myself drooling over this delicious piece of meat at Tasty Burger. I had planned on ordering the veggie burger, but when the waitress said it was actually made of tofu and not vegetables, I decided it wasn’t for me. My body does not seem to be a fan of soy products. It took me a moment to get over how much grease was dripping from he burger,…

‘Maids Gathering

Uncategorized

Last night was a blast. I had lots of this: along with this:   Lauren prepared an awesome taco bar and we had lots of chips and various Mexican themed dips to go along with the main event. My cake seemed to be successful. Another guest brought an awesome mint trifle too… Here’s the recipe for the cake and strawberry buttercream if anyone is interested. I doubled the cake one to make two and added extra milk for moisture, but…
